Delicious Homemade Apple Pie Tuesday, October 19, 2010

Fresh, homemade pie crust filled with a delicious apple pie, brown sugar and cinnamon mixture. While this is a truly fantastic pie to enjoy when apples are in peak season, and as a finish to a great holiday meal, there is no reason not to enjoy it throughout the year. If crisp, ripe Golden Delicious apples are not available, substitute with your favorite golden colored apple or sweet red variety.

Cooks Notes:
The key to a successful flaky, pie crust is to use proper technique in mixing the butter and shortening into the dry ingredients. Cut in the cold butter and shortening until they resemble hazelnut size balls. Stop mixing the dough at this point. It is a good idea to complete the task of making the crust before moving onto the pie filling.

It is very important not to overcook the apples in the skillet.

Should the pie crust edge begin browning too quickly, cover the edge of the pie rim with foil.

Delicious Homemade Apple Pie

Ingredients:

Crust:
2-1/2 cups plus 1-1/2 tablespoons All-Purpose Flour
1 teaspoon Salt
2 teaspoons Sugar
2 (8 ounces each) sticks Cold Unsalted Butter, cut into tablespoons
1/2 cup Cold Solid Vegetable Shortening
Ice Water

Filling:
4-1/2 pounds Golden Delicious Apples
juice of 1 Fresh Lemon
1 cup packed Dark Brown Sugar
1/4 teaspoon Cinnamon
2 teaspoons Milk

Preparation:

Crust:

1. Chill all crust ingredients for 1 hour prior to making crust.

2. Add 2-½ cups all-purpose flour, salt, and 1 teaspoon sugar to food processor. Pulse to combine.

3. Add 1 stick (8 tablespoons) butter and shortening to food processor bowl and pulse until mixture resembles pea shape crumbs.

4. Add 1/3 cup ice water to food processor and pulse. Dough should come together in your hand, if it is still too dry add 1 tablespoon of water and pulse again. Repeat process until dough is moist enough to roll.

5. Remove dough from food processor to flat work surface. Gently press dough into ball and divide ball into two halves. Cover both dough balls with plastic wrap and refrigerate approximately 1 hour or overnight.

6. Remove dough balls from refrigerator, unwrap and roll into two circles, 1 (13-inch circle) and 1 (12-inch circle). Dough should be approximately 1/8-inch thick.

7. Place larger crust into 9-inch glass pie plate. Trim so ½-inch crust overhangs pie plate edge.

8. Place pie plate in refrigerator.

9. Place remaining crust onto parchment lined baking sheet or flat plate, cover with plastic wrap and refrigerate.

Filling:

1. Peel the apples with a vegetable peeler. Cut them in half and remove the core. Cut each half into 3 to 4 long slices.

2. Place the apples in a large mixing bowl and toss them with the lemon juice.

3. Add remaining stick (8 tablespoons) butter to large skillet. Melt over low heat.

4. Stir the brown sugar into the melted butter.

5. Pour the apples into the butter and brown sugar mixture. Toss with tongs or wooden spoon to coat.

6. Stirring occasionally, increase the heat to medium high and cook approximately 12-15 minutes, or until apples are tender, but not mushy. Do not overcook.

7. Remove skillet from heat and transfer apples to a rimmed cookie sheet.

8. Sprinkle 1-½ tablespoons of flour and cinnamon over apples. Toss apples well to combine.

9. Allow the apples to cool to room temperature, approximately 30-45 minutes.

Baking:

1. Preheat the oven to 450 F.

2. Spoon apple mixture into pie pastry. Pour any remaining juices over apples.

3. Brush pie pastry edge with a pastry brush dipped in water.

4. Center the top crust over the filling. Crimp or press edges to seal.

5. Trim top crust with scissors or sharp knife, if necessary.

6. Dissolve remaining sugar in the milk. Brush top crust with milk mixture.

7. Cut several slits in the top crust with a sharp knife for steam to escape.

8. Bake 25 minutes, or until crust is golden brown.

9. Reduce the heat to 375 F.

10. Bake additional 20 minutes.

11. Remove from oven and transfer to a wire rack.

12. Cool at least 1 hour before slicing and serving.

I just received it and I can say that everybody at home wanted to use it and loved the results that are magical.
It is easy to operate, my kids (5 and 7 yrs.) managed to use this gadget without effort (there are some sharp parts so I wouldn't advise children using this without supervision).
In the case of apples some of the juice drops to the surface.
Eating the sliced apple is fun! I will be eating more apples, thats for sure!

Princess 1940 Potato Rumbler-Peeler Review

The Princess 1940 Potato rumbler is a domestic appliance used to automatically peel potatoes. This particular potato rumbler sports 6 stainless steel blades attached to its internal drum. It is capable of peeling 1kg of potatoes in 2 as little as 2 minutes. It also comes with a safety switch to ensure that it's not accidentally switched on with your hand in the wrong place. It has a transparent lid as well as a retractable cord. This potato rumbler also comes with a separate basket that can be used to dry salad inside the spinner. Best of all, its internal parts are dishwasher safe so you can peel your potatoes then dismantle the rumbler and wash it in the dishwasher.

How does it stack up?

This is an incredible machine for the price. It's relatively quiet in its function compared to its competitors and is also efficient, requiring only 400ml of water to peel 1kg of tomatoes. The fact that you can wash it in the dishwasher is a major advantage as this will save considerable time cleaning it. It is capable of peeling potatoes faster than the average chef can manually peel them with considerably less effort. Even if it saves you 5 minutes a day in the kitchen, over a full year, that's over 24 hours. Worth every penny to save a full day in of peeling potatoes by hand in the kitchen every year. We carried out a test to see how much weight the potatoes lost after a cycle in the rumbler. We hand peeled and rumbled 2 separate kilos of potatoes and found that the hand peeled potatoes lost 6% of their total weight after peeling. The rumbled potatoes lost 8%. This is an incredible result.

Negative points

The potato rumbler is not all good however. It is unable to remove any "eyes" and if the potato has any inverted curvature, the rumbler cannot access it to peel it. This is easy to rectify after the rumbler has finished, a few extra seconds taking out the eyes and peeling very small parts of a few potatoes. It is also a little noisy, although this particular model is less noisy than its competitors. It dances around the worktop when in use so it's a good idea to keep an eye on it.

Summary

Overall, a great example of a very handy invention. It will save you considerable time peeling potatoes over the course of a year but can be a little noisy at times.
